- 1 1/4 cups dry white wine (such as Sauvignon Blanc)
- 1 tablespoon cherry brandy
- 1 clove garlic, slightly crushed
- 1 pinch cayenne pepper
- 1 pinch freshly grated nutmeg
- 4 teaspoons cornstarch
- 8 ounces shredded Gruyere cheese
- 8 ounces shredded Emmentaler cheese

Combine white wine, cherry brandy, minced garlic clove, a pinch of cayenne pepper, and a few grinds of nutmeg in a saucepan. Whisk to merge the ingredients seamlessly and position the pan over medium heat on your stovetop.

Heat will cause the mixture to start thickening and you'll notice wisps of steam rising from the pan, which is a clear indication that it's almost ready. Allow the mixture to cook for 3 to 5 minutes, whisking occasionally to prevent lumps from forming.

Gradually introduce the Gruyère and Emmentaler cheeses, adding handful after handful until they're fully incorporated. Whisk continuously to ensure the cheese melts evenly and the sauce becomes silky smooth.

Once all the cheese has been incorporated, remove the pan from the heat source and transfer the sauce to a fondue pot. This will allow you to serve the cheese sauce in its most appealing form.
