Ingredients
- 5 1/2 ounces manicotti pasta
- 1 pint part-skim ricotta cheese
- 8 ounces shredded mozzarella cheese
- 3/4 cup grated Parmesan cheese, divided
- 2 large eggs
- 1 teaspoon dried parsley
- salt and ground black pepper to taste
- 1 (16 ounce) jar spaghetti sauce
Instructions
1
Cook pasta shells in boiling water until they are tender but still firm to the bite, approximately 10-12 minutes; then drain and refresh with icy water.
2
Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit (175 degrees Celsius).
3
Combine ricotta, mozzarella, half a cup of grated Parmesan cheese, eggs, chopped parsley, salt, and pepper in a large mixing container until everything is fully incorporated.
4
Pour half a cup of your favorite pasta sauce into an 11x17-inch baking dish. Fill each pasta shell with three tablespoons of the cheese mixture, and place them on top of the sauce. Pour the remaining sauce over the pasta shells and sprinkle with the rest of the Parmesan cheese.
5
Bake in the preheated oven until it's hot and bubbly, roughly 45 minutes.
