Cheddar Zucchini Bake
Ingredients
  • 2 pounds zucchini, sliced crosswise 1/3-inch thick
  • 1 onion, diced
  • 1 (10.75 ounce) can cream of chicken soup
  • 8 ounces sour cream
  • salt and ground black pepper to taste
  • 1 (6 ounce) package corn bread stuffing mix (such as Kraft® Stove Top®)
  • 1/4 cup butter, melted
  • 1 cup grated Cheddar cheese

Collect all necessary components for the recipe.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Heat 1/2 cup of salted water in a pot until it reaches boiling point. Introduce zucchini and onion into the boiling water, then continue cooking without covering the pot until they become tender to the bite, approximately 5 minutes.

Transfer the cooked vegetables into a strainer and pour them into a bowl.

Mix soup and sour cream together in the bowl with the zucchini and onions. Add salt and pepper to taste.

Combine stuffing mix with melted butter in a small bowl; ensure everything is well incorporated.

Fill the bottom of a 9x13-inch baking dish with half of the prepared stuffing mix. Place the zucchini mixture on top, followed by half of the Cheddar cheese.

Add the remaining stuffing mix and sprinkle with the rest of the Cheddar cheese.

Cover the baking dish with aluminum foil.

Bake in the preheated oven until it's bubbly, approximately 30 minutes.

Remove the foil and continue baking until the cheese has melted and turned a golden brown color, about 15 minutes.
