Ingredients
- 1 serving cooking spray
- 1 (32 ounce) container egg whites
- 1/3 cup nonfat plain Greek yogurt
- 1 pinch salt and ground black pepper to taste
- 1 (8 ounce) package sliced fresh mushrooms
- 1 small onion, chopped
- 2 1/2 cups cooked turkey sausage crumbles (such as Jimmy Dean®)
- 1 plum tomato, chopped
- 2 cups shredded Cheddar cheese
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
Next, lightly coat a casserole dish with a non-stick cooking spray to prevent food from sticking and make cleanup easier.
3
In a separate bowl, combine egg whites, yogurt, salt, and pepper in a smooth mixture.
4
Pour the egg white mixture into the prepared casserole dish.
5
Place the dish in the preheated oven and let it cook until the edges start to firm up, approximately 10 minutes.
6
While the eggs are cooking, sauté sliced mushrooms and onions in a pan over medium heat until they become tender, taking around 5 to 10 minutes.
7
Spread the cooked mushroom mixture evenly over the partially set egg layer, followed by adding sausage crumbles and diced tomatoes on top.
8
Finish the dish off with a layer of melted Cheddar cheese.
9
Finally, continue baking in the oven until the eggs are fully set and the cheese is melted, requiring about 10 to 15 minutes.
