Ingredients
- 3 tablespoons shredded Cheddar cheese
- 2 green onions, chopped
- 2 slices cooked bacon, crumbled
- 2 tablespoons cream cheese, softened
- 2 tablespoons frozen chopped spinach
- 2 tablespoons finely chopped white mushrooms
- 1/4 teaspoon chopped garlic
- 1 pinch dried parsley
- salt and ground black pepper to taste
- 1 pork tenderloin, butterflied and pounded flat
- 1 cup dry bread crumbs
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently, 175 degrees Celsius.
2
Next, take a moment to prepare your baking sheet by applying a thin layer of grease.
3
To create the filling, combine an assortment of ingredients in a bowl: shredded Cheddar cheese, chopped green onions, crispy bacon bits, softened cream cheese, fresh spinach leaves, sautéed mushrooms, minced garlic, chopped parsley, salt, and black pepper.
4
Proceed to spread the filling mixture onto one side of a pounded tenderloin, then roll it into a cylindrical shape, much like a jelly roll.
5
Coat the rolled tenderloin with a layer of bread crumbs, and place it on the prepared baking sheet.
6
Finally, bake the tenderloin in the preheated oven until it reaches an internal temperature of at least 145 degrees Fahrenheit, or 63 degrees Celsius, as indicated by an instant-read thermometer inserted into the center. This should take approximately 1 1/2 hours, or until the pork is no longer pink in the center.
