Ingredients
- 1 1/2 tablespoons all-purpose flour
- 1/2 teaspoon paprika
- 3 thin chicken breast cutlets
- salt and ground black pepper to taste
- 3 wedges spreadable garlic and herb cheese (such as The Laughing Cow®), softened
- 1 cup frozen broccoli florets, thawed and finely chopped
- 1/4 cup shredded sharp Cheddar cheese
- toothpicks
- 1 tablespoon olive oil
Instructions
1
First, preheat your oven to the optimal temperature of 375 degrees F (190 degrees C).
2
Next, mix together flour and paprika in a shallow dish to create a versatile base for your dish.
3
Then, take the chicken cutlets and place them between two sheets of plastic wrap. Using a mallet, gently pound the chicken to an even thickness of 1/4 inch.
4
After that, sprinkle both sides of the chicken with salt and pepper to add flavor.
5
Meanwhile, combine a spreadable cheese in a bowl until it reaches a smooth consistency. Stir in broccoli and Cheddar to create a delicious filling.
6
Spread the cheese mixture evenly over the middle of each cutlet, then roll them over the filling to secure it. Use toothpicks to hold the edges in place.
7
Finally, coat the chicken with the flour-paprika mixture you created earlier.
8
Heat oil in an oven-safe skillet over medium-high heat. Place the chicken into the skillet and cook until browned, 2 to 3 minutes per side.
9
Transfer the skillet to the preheated oven and bake until the chicken is cooked through, 14 to 16 minutes. Check for doneness by inserting an instant-read thermometer into the center of the chicken, which should read at least 165 degrees F (74 degrees C). Remove the toothpicks before serving.
