Ingredients
- 1/2 pound bacon strips
- 1/2 cup bacon drippings
- 1 large onion, finely chopped
- 1/2 pound cooked ham, diced
- 1/4 pound chorizo sausage, crumbled
- 5 (16 ounce) cans pinto beans, rinsed and drained
- 1 whole chipotle pepper
- 2 cloves garlic, pricked with a fork
Instructions
1
Begin by cooking the bacon strips in a large skillet over medium heat until they reach a crispy state. Use a slotted spoon to carefully transfer the cooked bacon to paper towels, setting it aside for later use.
2
Next, pour the reserved 1/2 cup of bacon drippings into a large pot and warm it over medium heat.
3
Once the pot is hot, add sliced onions to the pot and cook until they turn a light brown color.
4
Then, stir in diced ham and chorizo to the pot.
5
Reserve 1 cup of beans from the recipe, then add the rest of the ingredients to the pot along with chipotle peppers and minced garlic.
6
Mash the reserved 1 cup of beans, then add them to the pot.
7
Allow the bean mixture to simmer over medium heat for approximately 30 minutes, or until it reaches a thick and soupy consistency.
8
If the beans become too dry during this time, you can add a small amount of water to restore their moisture.
9
Finally, remove the chipotle peppers and garlic from the pot before serving.
