  • 1/2 pound bacon, diced
  • 1 onion, chopped
  • 2 fresh tomatoes, diced
  • 1 (3.5 ounce) can sliced jalapeno peppers
  • 1 (12 fluid ounce) can beer
  • 1/3 cup chopped fresh cilantro

Start by adding pinto beans to a slow cooker, making sure they are completely submerged in water. Combine minced garlic and salt, then pour the mixture over the beans. Close the lid and cook on High for 1 hour.

Meanwhile, cook diced bacon in a large skillet over medium-high heat until it reaches an even brown color and remains tender. Remove about half of the rendered fat from the skillet, leaving a layer behind. Add sliced onions to the skillet and cook until they're tender.

Add crushed tomatoes, diced jalapenos, and a pinch of salt to the skillet. Cook until the mixture is heated through, stirring occasionally.

Transfer the skillet's contents to the slow cooker with the pinto beans. Stir everything together, then close the lid and continue cooking on Low for 4 hours.

About 30 minutes before the slow cooker's final cook time, stir in a small amount of beer and chopped cilantro.
