Ingredients
- 2 cups long grain white rice
- 4 cups water
- 3 slices turkey bacon
- 1 onion, chopped
- 1 teaspoon minced garlic
- 1 green bell pepper, seeded and chopped
- 1 (16 ounce) package smoked turkey sausage, halved and sliced
- 1 (14.5 ounce) can stewed tomatoes, drained
- 1 (14 ounce) jar spaghetti sauce
- dried Italian seasoning to taste
- salt and pepper to taste
Instructions

Combine rice and water in a saucepan, heating it over high heat until boiling point is reached.

Cover the saucepan with a lid, then decrease the heat to a low simmer and let it cook for 15-20 minutes or until rice is fully tender and water has been completely absorbed.

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

Heat a large skillet over medium heat, and add the bacon. Cook until it's nicely browned on both sides.

Add the onion, garlic, and green peppers to the skillet, stirring occasionally until they're soft.

Add the sausage to the skillet and cook until it's hot, then pour in the tomatoes.

Stir in the cooked rice and spaghetti sauce, adding Italian seasoning, salt, and pepper to taste.

Transfer the mixture to a large casserole dish and cover it with a lid or aluminum foil.

Bake the mixture in the preheated oven for 1 hour, then remove the lid and continue cooking for an additional 15 minutes.
