  • 2 cups uncooked quinoa, rinsed
  • 1 cup canned lentils, rinsed
  • 8 ounces fresh mushrooms, chopped
  • 1 quart vegetable broth
  • 1 bunch Swiss chard, stems removed

Begin by heating the oil in a substantial cooking vessel over an intermediate temperature. Introduce the onion and garlic into the pot, stirring to combine, then cook for 5 minutes, or until the onion has softened and become translucent. Combine the quinoa, lentils, and mushrooms in the pot, stirring to distribute evenly. Introduce the broth into the mixture, cover the vessel, and allow it to cook for 20 minutes.

Take the pot off the heat source. Shred the chard leaves and gently fold them into the cooked mixture, ensuring they are evenly distributed. Cover the pot once more and permit it to rest for 5 minutes, or until the chard has fully wilted.
