Cedar Plank Sun-Dried Tomato Salmon
Ingredients
  • 3 (12 inch) untreated cedar planks
  • 1 (1 1/2-pound) salmon fillet, with skin
  • 2 cups chopped oil-packed sun-dried tomatoes
  • 2 bunches fresh parsley, finely chopped
  • 3/4 cup sun-dried tomato and oregano salad dressing
  • 3/4 cup olive oil

Immerse cedar planks in water for an extended period, ideally several hours or overnight.

Preheat your outdoor grill to extremely high temperatures. Anoint the planks with olive oil.

Divide the salmon fillet into three manageable pieces. Coat each piece with olive oil and sprinkle a generous amount of parsley and sun-dried tomatoes on top. Drizzle the salmon with salad dressing.

Position the planks on the preheated grill and allow them to warm up for approximately 5 minutes. Place the salmon fillets on the planks, ensuring they are evenly distributed. Cover the grill and cook for 15 to 20 minutes or until the fish is tender enough to be flaked with a fork. Remove the salmon quickly to prevent overcooking and drying out of the fish. Serve immediately, straight from the grill.
