Cayenne Roasted Delicata Squash

  • 1 large delicata squash - ends trimmed, halved lengthwise, seeded
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper, or to taste

Preheat your oven to a high temperature of 450 degrees Fahrenheit, or equivalently, 232 degrees Celsius.

Next, prepare a baking sheet by lining it with parchment paper or a silicone mat to prevent food from sticking and make cleanup easier.

Take the squash halves, place them cut-side down on a cutting board, and carefully cut each half into thin slices. Transfer these slices to a large bowl.

Drizzle the olive oil over the squash slices and sprinkle salt and cayenne pepper to taste. Mix everything together until the squash is evenly coated.

Arrange the squash slices in a single layer on the prepared baking sheet, making sure they are not overlapping.
