Cauliflower Spinach Bhaji
Ingredients
  • 1/4 cup vegetable oil
  • 2 large onions, coarsely chopped
  • 1 head cauliflower, cut into florets
  • 2 teaspoons ground coriander
  • 2 cloves garlic, crushed
  • 1 1/4 teaspoons cayenne pepper
  • 1 (1 inch) piece fresh ginger, peeled and chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 (14.5 ounce) can diced tomatoes
  • 1 1/4 cups vegetable broth
  • salt and ground black pepper to taste
  • 1 pound fresh spinach, chopped and stems removed
Instructions
1
Preheat your stove by heating a substantial amount of vegetable oil in a large cooking vessel over an intermediate heat setting. Introduce sliced onions and cauliflower into the saucepan, stirring occasionally until they exhibit a slight degree of softening, approximately 3 minutes.
2
Add the following spices to the saucepan: coriander, garlic, cayenne pepper, ginger, cumin, and turmeric. Stir the ingredients to ensure they are evenly coated.
3
Next, incorporate crushed tomatoes and vegetable broth into the saucepan. Season with salt and black pepper to taste.
4
Once the mixture is heated through, bring it to a rolling boil. Cover the saucepan and adjust the heat setting to reduce the temperature.
5
Allow the mixture to simmer, allowing the flavors to meld together. This process should take approximately 8 minutes.
6
Once the spinach begins to lose its vibrant color and wilt, stir it gently into the saucepan. Cover the saucepan once more and continue to simmer until the spinach has completely wilted and the cauliflower is tender, taking around 8-10 minutes in total.
