Cauliflower Faux Potato Salad

  • 1 head cauliflower, cut into bite-size pieces
  • 4 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise, or more to taste
  • 2 tablespoons dill pickle relish
  • 2 tablespoons diced green onion
  • 1 tablespoon prepared yellow mustard
  • salt and ground black pepper to taste

Fill the bottom of a saucepan with water, making sure it's submerged just below the rim. Place the steamer insert into the saucepan and bring the water to a rolling boil. Next, add the cauliflower to the steamer and cover it with a lid. Allow the vegetables to become tender, taking around 5 minutes for them to reach the desired consistency.

Combine the cooked cauliflower with a mixture of beaten eggs, mayonnaise, dill pickle relish, chopped green onion, mustard, salt, and pepper in a bowl to create the final dish.
