- 3 small green onions, chopped
- 5 tablespoons sweet pickle relish
- 5 tablespoons light mayonnaise
- 1 tablespoon mustard
- salt and ground black pepper to taste

Fill a large container with water that has been lightly seasoned with salt, then bring it to a rolling boil.

Submerge the cauliflower in the boiling water and cook until it becomes soft and easily pierces with a fork, approximately 10 minutes; remove from the water.

Combine the cooked cauliflower, beaten eggs, grated carrot, chopped green onions, relish, mayonnaise, and mustard in a spacious bowl and mix until everything is fully incorporated. Add a pinch of salt and a few grinds of black pepper to taste.
