- 1/4 cup vegetable oil for frying, or as needed

Submerge catfish fillets in a saucepan filled with sufficient water to completely submerge the fish; initiate boiling. Continue cooking until the fish breaks apart effortlessly with a fork, indicating it is cooked through.

Remove the saucepan from heat and discard the excess water.

Combine the fish in the saucepan, then mash it using a spoon or masher until it reaches a uniform consistency. Introduce crackers, chopped onion, beaten egg, salad dressing, mustard, and Old Bay seasoning into the mixture. Blend all ingredients together until they are evenly distributed.

Divide the fish mixture into 8 equal portions and shape each portion into a patty.

Heat oil in a large, heavy skillet over medium-high heat. Fry the patties in hot oil until they turn golden brown on both sides, achieving a minimum internal temperature of 145 degrees F (63 degrees C) when measured with an instant-read thermometer.
