- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon vegetable oil
- 2 tablespoons butter, divided
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 tablespoon minced fresh ginger root
- 1 cup chicken broth
- 2 cups cold water
- 3/4 cup whole roasted cashews
- 1/3 cup sliced green onions
- 1/3 cup freshly chopped cilantro
- 1 lime, juiced

Combine salt, paprika, garam masala, cumin, coriander, cayenne, and turmeric in a small bowl. Set the spice mixture aside momentarily.

Cut one chicken thigh into two halves lengthwise along its natural seam. Divide the thicker portion in half, resulting in three 2-inch pieces of chicken. Repeat this process with the remaining chicken thighs.

Transfer the chicken to a bowl and add oil, along with approximately half of the spice blend. Mix everything together thoroughly before covering it with plastic wrap and refrigerating for 4 to 12 hours.

When prepared to cook, melt 1 tablespoon of butter in a large pan over extremely high heat until it turns golden brown. Add the chicken pieces to the pan in a single layer and cook until they are nicely browned, taking about 4 to 5 minutes per side. Return the chicken and any accumulated juices back into the bowl.

Heat the remaining butter in the same pan over a medium-high heat setting. Add an onion, garlic, tomato paste, ginger, and the remaining spice blend to the pan. Cook and stir constantly until everything is fragrant, taking about 2 to 3 minutes. Pour in chicken broth and bring the mixture to a gentle simmer. Add the chicken pieces and any accumulated juices back into the pan.

Combine water and cashews in a blender; blend everything on high speed until it becomes extremely smooth, then stir it into the pan. Reduce the heat to a medium setting and simmer until all the flavors blend together, taking about 15 to 20 minutes. Stir in green onions and cilantro before tasting for seasoning. Squeeze some fresh lime juice into the dish to complete it
