Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 2 cups white sugar
- 1 1/2 cups vegetable oil
- 4 eggs
- 3 (4 ounce) jars carrot baby food
Instructions
1
Preheat your oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, take a 10x15-inch jelly roll pan and grease it thoroughly with cooking spray or oil. Then, dust the entire surface of the pan with flour to prevent the cake from sticking.
3
In a large mixing bowl, use an electric mixer to combine 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, and a pinch of salt. Set the mixture aside for later use.
4
In another large mixing bowl, use an electric mixer to cream together 1 cup of granulated sugar, 1/2 cup of vegetable oil, and 2 large eggs until the mixture is smooth and free of lumps. Gradually add the flour mixture to the sugar mixture until just combined, being careful not to overmix.
5
Now, add 1/4 cup of carrot baby food puree to the mixture and stir until it is fully incorporated.
6
Pour the batter into the prepared jelly roll pan and smooth out the top.
7
Bake the cake in a preheated oven for 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let it cool completely on a wire rack.
