- 2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 4 teaspoons baking powder
- 2 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 egg whites

Combine the dry ingredients - flour, brown sugar, white sugar, baking powder, cinnamon, and salt - in a bowl until the mixture is smooth and free of lumps.

Mix milk, vegetable oil, and vanilla extract in a separate bowl until well combined with the dry ingredients.

In a large mixing container, whip egg whites into soft peaks using a beater or whisk. Be sure to lift the beater straight up, as this will help create soft mounds rather than sharp peaks.

Gently fold the egg whites into the batter mixture to avoid deflating it.

Heat a waffle iron according to its manufacturer's instructions. Spray the iron with cooking spray for non-stick performance.

Cook waffles in batches, using the preheated iron, until they are crispy and golden brown, taking approximately 2 minutes per batch. Continue with the remaining batter in batches.
