Ingredients
- 1 pound pork shoulder
- 2 tablespoons Mazola® Corn Oil
- 1/4 cup chopped onions
- 1/2 teaspoon Spice Islands® Garlic Powder
- 1 tablespoon Spice Islands® Chili Powder
- 1/4 teaspoon Spice Islands® Chipotle Chile Powder
- 2 tomatillos, finely chopped
- 1/2 cup finely chopped tomatoes
- 1/4 cup coarsely chopped fresh cilantro
- 4 corn tortillas

Divide the pork into 1-inch sized pieces and sprinkle with salt and pepper to taste.

Heat a substantial amount of oil in a large cooking vessel or Dutch oven. Add the pork, onions, garlic powder, chili powder, and chipotle chile powder; cook until the meat is nicely browned on all sides, approximately 3 to 5 minutes.

Add a sufficient quantity of water to just cover the pork; bring the mixture to a rolling boil. Cover the vessel, decrease the heat, and let it simmer for 30 minutes. Remove the lid and continue to cook until most of the liquid has evaporated, roughly 45 minutes.

Prepare a small bowl by combining chopped tomatillos, tomatoes, and cilantro.

Distribute an equal amount of pork onto each tortilla. Top with the tomatillo salsa.
