- 1 (20 ounce) can pineapple slices packed in 100% juice, drained, and cut into 2-inch pieces
- 2 red bell peppers, cut into thin strips
- 1 large red onion, sliced
- 1 jalapeno pepper - halved lengthwise, seeded, and sliced
- 2 tablespoons olive oil
- 1 tablespoon Jamaican jerk seasoning
- 1/2 cup chopped fresh cilantro
- 2 cups hot cooked brown rice
- 1 lime, cut into wedges

First, preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Next, cover two large baking trays with aluminum foil.

To prepare the shrimp, carefully remove their shells and extract the veins. If you prefer to keep the tails intact, proceed with that.

Rinse the shrimp under cold water and gently pat them dry using a paper towel to remove excess moisture.

In a spacious bowl, combine the shrimp with diced pineapple, bell peppers, red onion, jalapeno pepper, oil, and jerk seasoning. Mix the ingredients gently to avoid damaging them.

Divide the shrimp mixture evenly between the two prepared baking trays.

Place the trays in the preheated oven and roast until the shrimp are no longer translucent, taking approximately 15 minutes.
