Remove the outer, tough layers from the cabbage head by gently pulling them off. Next, carefully remove the core and shred the remaining cabbage into bite-sized pieces; set it aside for now.

In a large, deep skillet, heat the olive oil over medium-high temperatures until it starts to shimmer. Add the onion, bell pepper, and green onion to the skillet and cook them, stirring occasionally, until they are softened and fragrant, approximately 5 minutes have passed.

Now, add the Scotch bonnet pepper, thyme, and salt to the skillet with the vegetables. Stir everything together until the flavors are well combined.
