Tropical Spiced Roast Chicken
Ingredients
  • 1 1/2 tablespoons fresh lime juice
  • 2 fluid ounces rum
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground clove
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1 (3 pound) whole chicken
  • 1 tablespoon vegetable oil

Heat the oven to its highest temperature setting, which is 325 degrees F (or equivalently, 165 degrees C).

In a tiny container, blend the lime juice, rum, and brown sugar together; reserve the sauce for later use.

Combine the cayenne pepper, clove, cinnamon, ginger, pepper, salt, and thyme leaves in a bowl. Anoint the chicken with oil before coating it evenly with the spice blend.

Position the chicken in a roasting dish and bake for approximately 90 minutes, or until the juices flow freely or when a meat thermometer inserted into the thickest part of the thigh reaches 180 degrees F. Periodically baste the chicken with the previously reserved sauce every 20 minutes during cooking. Once done, let the chicken rest for 10 minutes before slicing it up.
