  • 2 teaspoons fresh ginger root, grated
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground clove
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 2 limes, zested and juiced
  • 1 cup orange juice
  • 1 rack pork spareribs, cut in half

First, preheat the oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius).

Meanwhile, combine the brown sugar, ginger, cayenne pepper, ground clove, cinnamon, paprika, dried oregano, black pepper, salt, and lime zest in a bowl; set it aside for now.

Next, extract the juice from the limes and mix it with the freshly squeezed orange juice in a separate container.

Now, take the spice mixture and apply it evenly to both sides of the ribs, making sure they are well-coated.

Place the coated ribs in a clear glass baking dish, and pour the citrus-based marinade over them.

Cover the dish with a lid to trap the flavors, and bake in the preheated oven for 90 minutes.

After 90 minutes, remove the lid and continue cooking until the ribs are nicely browned, adding an additional 20 to 30 minutes to the overall cooking time.
