Caribbean Pork Goulash
Ingredients
  • 1 tablespoon vegetable oil
  • 1 pound boneless pork roast, cubed
  • 1 pound onions, diced
  • 1 pound bananas, peeled and diced
  • 1 (16 ounce) can diced tomatoes with juice
  • cayenne pepper to taste
  • salt and ground black pepper to taste

Preheat a large skillet over medium heat, then carefully pour in the oil. Sear the pork on all sides until it reaches a rich brown color, before adding sliced onions to the skillet. Continuously stir and cook until the onions are softened and tender.

Combine mashed bananas, diced tomatoes, and their respective juices in the skillet. Introduce heat to a boil, gradually decrease the heat to medium-low, and let it simmer for 30 minutes, stirring occasionally until the pork is extremely tender. Add a pinch of cayenne pepper, salt, and pepper to enhance the flavors.
