Ingredients
- 1 cup soy sauce
- 3/4 cup distilled vinegar
- 1 medium white onion, coarsely chopped
- 1/4 cup extra-virgin olive oil
- 4 green onions, coarsely chopped
- 2 tablespoons dried thyme
- 2 habanero peppers, stemmed
- 1 tablespoon brown sugar
- 1 tablespoon ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
- 1 pound uncooked medium shrimp, peeled and deveined
- heavy duty aluminum foil

Heat the grill to a medium-high temperature before starting to cook.

To create the jerk seasoning, combine soy sauce, vinegar, onion, olive oil, green onions, thyme, habanero peppers, sugar, nutmeg, allspice, and cloves in a food processor. Process the mixture for approximately 15 seconds to achieve the desired consistency.

Create a makeshift bowl by shaping foil into a cup-like shape. Place the shrimp inside and pour enough jerk seasoning over them to cover the entire surface.

Place the foil bowl on the grill and seal it by folding the top over, leaving a small gap to allow steam to escape. Cook for around 10 minutes or until the shrimp turn pink, stirring occasionally.

To serve, transfer the cooked shrimp to a medium-sized bowl.

In a small saucepan, heat the remaining jerk seasoning over medium heat for 2 to 3 minutes. Spoon this heated sauce over the cooked shrimp.
