Ingredients
- 1 (1 1/2 pound) whole red snapper, cleaned and scaled
- salt and freshly ground black pepper to taste
- 1 quart vegetable oil for frying
- 1 teaspoon vegetable oil
- 1/2 white onion, sliced
- 1/2 large carrot, peeled and cut into thin strips
- 1/8 teaspoon minced garlic
- 1/4 cup white vinegar
- 1 tablespoon water
- 3/4 teaspoon salt
- 1/4 habanero pepper, seeded and minced
- 1 sprig fresh thyme, leaves stripped
- 1 allspice berry, cracked
- 1 pinch brown sugar

Dust the fish with a paper towel to remove excess moisture; make 3 shallow cuts on each side of the fish, being careful not to cut too deeply. Sprinkle a generous amount of salt and pepper evenly over the entire surface of the fish.

Heat 1-quart of oil in a large skillet over high heat until it reaches a smoking point. Sear the fish in hot oil until it develops a golden-brown crust and becomes crispy, approximately 5 minutes on each side. Transfer the fish to a paper towel-lined plate to drain excess oil.

Heat 1 teaspoon of oil in a large skillet over high heat. Sauté sliced onions, carrots, and minced garlic for 1 to 2 minutes, stirring constantly.

Combine vinegar, water, a pinch of salt, the seeds of one habanero pepper, dried thyme, ground allspice, and sugar in the skillet. Continue cooking until the liquid has reduced to almost nothing, taking about 5 minutes. Spoon the caramelized onion mixture over the fried fish and serve immediately.
