Caribbean Curry Chicken

  • 1 tablespoon onion powder
  • 2 teaspoons salt
  • 1 sprig fresh thyme, leaves stripped
  • 1 pinch ground allspice, or more to taste
  • salt and ground black pepper to taste
  • 2 1/4 pounds whole chicken, cut into pieces
  • 3 tablespoons vegetable oil
  • 3 cups water
  • 1 potato, diced
  • 1/2 cup chopped carrots
  • 2 scallions (green onions), chopped
  • 1 (1 inch) piece fresh ginger root, minced
  • 1 Scotch bonnet chile pepper, chopped, or to taste

Combine 2 tablespoons of curry powder, garlic powder, seasoned salt, onion powder, salt, thyme leaves, allspice, and pepper in a bowl. Mix well until the spices are evenly blended. Add chicken to the bowl and coat it thoroughly with the spice mixture, ensuring that the spices stick to the chicken.

Heat a generous amount of oil in a large cast-iron skillet over high heat until it reaches its smoking point, approximately 2 to 3 minutes. Add an additional 2 tablespoons of curry powder and stir until the mixture is well combined and the curry powder has darkened in color. Introduce chicken to the hot oil mixture, then reduce the heat to a medium setting. Add water, diced potato, sliced carrots, chopped scallions, grated ginger, and chile pepper to the skillet.

Cover the skillet with a lid and bring the mixture to a gentle simmer, allowing the chicken to cook undisturbed for the final 15 minutes of cooking. This will take a total of 30 to 40 minutes, depending on the size and thickness of the chicken. To verify that the chicken is cooked, insert an instant-read thermometer into the thickest part of the thigh, near the bone. The internal temperature should reach 165 degrees F (74 degrees C).

Once the chicken is cooked, remove it from the skillet and place it in a serving dish. Continue to simmer the remaining gravy, uncovered, until it reaches your desired consistency. Serve the chicken with a rich and flavorful gravy.
