Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons ground cardamom
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup white sugar
- 1/8 teaspoon salt
- 2 teaspoons grated orange zest
- 1/3 cup butter, softened
- 2/3 cup half-and-half
- 2 eggs
Instructions
1
Preheat the krumkake iron over a medium-low heat setting, making sure to only grease it once with oil or vegetable spray. For electric krumkake irons, follow the manufacturer's guidelines for preheating.
2
In a large mixing bowl, combine and sift the flour, ground cardamom, grated ginger, cinnamon, and nutmeg. Then, blend the sugar, salt, and orange zest into this dry mixture until it's evenly incorporated.
3
In a separate bowl, warm the butter and half-and-half in the microwave for about 25 seconds. Allow it to cool slightly, then whisk the eggs one at a time into this mixture.
4
Combine the warm cream mixture with the dry ingredients and mix until well blended.
5
Using your preheated krumkake iron, drop 1 tablespoon of batter onto each mold and use a spoon to scrape off any excess. Close the iron, cook until it stops steaming and the cookies are golden brown, taking about 30 to 60 seconds. Remove the cookie from the iron while it's still hot and shape into a cone by wrapping it around a wooden krumkake cone. Hold the cone in place for about 10 seconds, then remove and let it cool completely on waxed paper. Repeat the process with the remaining batter.
