Cardamom Milk Pudding

  • 2 cups milk
  • 6 tablespoons cornstarch
  • 1/4 cup white sugar
  • 2 drops cardamom-flavored extract
  • 1/4 cup water
  • 5 tablespoons white sugar
  • 1/4 vanilla bean, split lengthwise and seeds scraped
  • 1/4 cup unsalted pistachios, coarsely chopped
  • 1 tablespoon dried rose petals, or as needed

Combine the milk and cornstarch in a bowl, stirring until you have a smooth paste.

Place the remaining milk into a saucepan and add sugar and cardamom extract, stirring gently until the sugar is fully incorporated.

Heat the mixture over a low heat setting, stirring constantly until the sugar has dissolved completely.

Add the cornstarch mixture to the saucepan and continue to simmer until the mixture thickens, taking around 5-10 minutes.

Pour the milk mixture into individual ramekins and cover them, allowing the mixture to cool to room temperature.

Refrigerate the ramekins for at least 3 hours, or until chilled to perfection.

Combine water, sugar, and vanilla seeds in a saucepan and bring the mixture to a boil over low heat.

Stir constantly until the sugar is fully dissolved, creating a syrup-like consistency.

Allow the syrup to cool before using it as desired.

Sprinkle each serving with chopped pistachios and dried rose petals, finishing off the dish by drizzling it with 1 tablespoon of syrup.
