Caramelized Spicy Chicken
Ingredients
  • 3/4 cup light brown sugar
  • 1/3 cup rice vinegar
  • 1/3 cup fish sauce
  • 4 cloves finely minced garlic
  • 2 tablespoons finely grated fresh ginger
  • 2 teaspoons hot pepper sauce, or to taste
  • 1 teaspoon soy sauce
  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1/2 cup sliced, seeded jalapeno peppers
  • 1/2 cup sliced, seeded mild red chilies or bell peppers
  • 1/2 cup roasted peanuts
  • 1/2 cup chopped green onions, plus more for garnish
  • 1/4 cup chopped fresh cilantro leaves
  • 4 cups cooked white rice
Instructions
1
Combine the brown sugar, vinegar, fish sauce, garlic, ginger, hot sauce, and soy sauce in a large bowl to create the marinade.
2
Place the chicken in a separate container and pour 1/4 cup of the marinade over it. Make sure the chicken is evenly coated with the mixture, then set it aside to marinate for 15 minutes.
3
Heat a generous amount of vegetable oil in a thick skillet over high heat until the oil begins to sizzle and smoke. Add the chicken in a single layer, making sure not to overcrowd the skillet, and cook and stir constantly until the chicken starts to develop a rich caramelized crust and turns deep brown, typically taking around 8-10 minutes.
4
Once the chicken is cooked to your liking, reduce the heat to a medium setting and stir in some diced jalapeƱos, red peppers, peanuts, and 1/2 cup of chopped green onions. Cook for just 1 minute to allow the flavors to meld together.
5
Add the remaining marinade sauce to the skillet and let it simmer until heated through, taking around 1-2 minutes.
6
Finally, stir in some chopped cilantro to add a fresh touch to the dish. Serve the chicken over steaming hot cooked rice and top it with additional chopped green onions for a delicious and visually appealing meal.
