Ingredients
- 1 pound parsnips, peeled
- 2 tablespoons olive oil
- 1 teaspoon onion powder
- 3/4 teaspoon garlic salt
- 1/8 teaspoon freshly ground black pepper
- 1 tablespoon minced fresh parsley
- olive oil to drizzle
Instructions
1
First, preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Next, prepare a baking sheet by lining it with parchment paper.
2
Then, take the larger ends of the parsnips and cut them in half lengthwise. After that, slice the parsnips into thin, diagonal pieces, aiming for uniform sizes. Place these sliced parsnips in a bowl and try to keep them consistent in size.
3
Add 2 tablespoons of olive oil to the bowl with the parsnips, along with a sprinkle of onion powder, garlic salt, and pepper. Mix everything together until the parsnips are evenly coated.
4
Arrange the parsnip slices in a single layer on the prepared baking sheet. This will ensure they roast evenly and don't overlap.
5
Place the baking sheet in the preheated oven and let the parsnips roast until they are lightly caramelized and tender, taking about 25 to 28 minutes. Halfway through the cooking time, give the parsnips a gentle turn over to ensure even browning.
6
Remove the roasted parsnips from the oven and transfer them to a serving dish. Sprinkle some fresh parsley on top, followed by a light drizzle of oil.
7
Finally, season the parsnips with additional salt and pepper if you desire a bit more flavor.
