  • 3 tablespoons butter
  • 2 onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground coriander seed
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon salt

Preheat your oven to a high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric measurements).

Cut the acorn squash in half lengthwise; place it cut-side up on a baking sheet and roast for 50 minutes, or until the flesh is tender enough to easily pierce with a fork.

Allow the squash to rest and cool for 20 minutes, allowing its flavors to meld together.

Meanwhile, melt a generous amount of butter in a large skillet over medium heat; add sliced onions and sauté, stirring occasionally, for 10 minutes or until they develop a rich brown color around the edges.

Scoop out the seeds and stringy pulp from the roasted squash; discard these unwanted parts.

Next, scoop out the tender flesh of the squash and chop it into bite-sized pieces; add these to the onion mixture. Discard any remaining squash skins.
