- 2 pounds russet potatoes
- 2 tablespoons olive oil
- 4 onions, thinly sliced
- 2 tablespoons chopped garlic
- 1/2 cup butter
- salt to taste
- ground white pepper, to taste
- 1 tablespoon finely minced fresh parsley

Preheat your oven to 400 degrees Fahrenheit, which is equivalent to 200 degrees Celsius.

Peel the potatoes and cut them into thin slices, approximately half an inch in length. Submerge these slices in a pot and cover them with water; bring the mixture to a rolling boil. Allow it to boil for 2 minutes, then drain the water and set the potatoes aside.

Heat a large oven-safe skillet over medium-high heat on your stovetop. Pour in a generous amount of olive oil, then add sliced onions to the skillet. Sauté the onions until they are lightly caramelized and have a deep golden color, which should take around 8 to 10 minutes. Introduce minced garlic into the skillet and sauté until the onions are deeply browned and the garlic is soft.

Transfer the onion mixture to a bowl, taking care not to spill any of the mixture.

Place the skillet back on the stovetop over low heat. Melt butter in the skillet, then cover the bottom with one-third of the sliced potatoes. Season the potatoes with salt and pepper to taste. Cover the bottom layer of potatoes with half of the onion mixture, followed by half of the remaining sliced potatoes. Season these layers with salt and pepper as well. Spread the remaining onion mixture evenly over the top, followed by the final layer of potatoes.

Bake the potato mixture in your preheated oven until it is tender and has a golden brown color on top, which should take around 10 to 12 minutes.

Use a spatula to carefully transfer the cooked potatoes to a serving platter. Sprinkle chopped parsley over the top of the potatoes just before serving.
