Cut the nectarine into two equal halves by making a horizontal incision on both sides of the pit. Gently pry open the halves and discard the seed.

Dust a generous amount of sugar onto the cut surface of each nectarine half.

Arrange the nectarine halves, cut-side facing downwards, onto a heated griddle or skillet over medium heat; cook for 1 1/2 minutes.
