- 4 (3/4 inch) thick pork chops
- 1 teaspoon vegetable oil
- 2 tablespoons brown sugar
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- salt and pepper to taste
- 2 tablespoons unsalted butter
- 2 medium tart apples - peeled, cored and sliced
- 3 tablespoons pecans

Preheat your oven to 175 degrees F (80 degrees C) by placing a medium-sized baking dish inside and setting the desired temperature.

Heat a large skillet over high heat, then carefully brush the chops with oil to prevent sticking. Place the chops into the hot pan and cook for 5-6 minutes on each side, or until they're no longer pink in the center. Use an instant-read thermometer to check the internal temperature, aiming for 145 degrees F (63 degrees C).

Transfer the cooked chops to the preheated baking dish in the oven, where they'll stay warm during cooking.

In a separate bowl, combine brown sugar, cinnamon, nutmeg, salt, and pepper to create a sweet spice blend.

Melt butter in the same skillet over low heat, then add sliced apples and stir in the spice blend. Cover the pan and cook until the apples are tender, about 5 minutes.

Using a slotted spoon, carefully remove the cooked apples from the sauce and arrange them on top of the pork chops in the oven.

Continue to cook the remaining sauce, uncovered, until it thickens slightly, taking about 2-3 minutes.
