Ingredients
- 1 (8 ounce) bag corn puffs (such as O-Ke-DokeĀ®)
- 1 cup salted peanuts
- 1 cup butter
- 1 cup packed brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon baking soda
Instructions
1
Preheat the oven to 250 degrees Fahrenheit (120 degrees Celsius). Combine corn puffs and peanuts in a large roasting dish.
2
Heat butter, brown sugar, and corn syrup to a rolling boil in a heavy 2-quart saucepan. Stir the mixture for 2 minutes, ensuring it's smooth and free of lumps.
3
Immediately remove the saucepan from heat; stir in baking soda until the mixture becomes bubbly and frothy.
4
Pour the hot sugar mixture over the corn puff and peanut mixture, then use rubber spatulas to mix everything thoroughly.
5
Place the sugar-coated corn puff mixture in the preheated oven, stirring every 10 to 15 minutes, until it reaches a crunchy consistency, approximately 45 minutes.
6
Spread the cooled mixture on waxed paper to cool down. Once it has cooled, break it apart into smaller pieces and store them in an airtight container to maintain freshness.
