- 2 eggs
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 2 teaspoons lemon extract
- 1/3 cup butter, melted
- 1 cup white sugar
- 1 tablespoon corn syrup
- 1 teaspoon lemon juice
- 6 tablespoons heavy cream

Preheat your pizzelle iron to the optimal temperature for cooking, ensuring it reaches a suitable heat level for this recipe.

In a separate bowl, combine the flour, baking powder, and salt in a smooth, even mixture. Set this aside for later use.

In a large mixing bowl, whisk together the eggs and 3/4 cup of sugar until they are fully incorporated and blended together. Whisk in the vanilla extract and lemon flavoring to add depth to your mixture.

Slowly pour in the melted butter while whisking vigorously, taking care not to create any lumps or unevenness. Gradually mix in the dry ingredients until they are fully incorporated.

Spoon or pipe 1 1/2 tablespoons of the batter onto the preheated pizzelle iron. Close the lid and secure it with the clasp, allowing for even cooking.

Cook the pizzelle for 50 to 60 seconds before carefully removing it with a small spatula. Transfer the cooked pizzelle to wire racks to cool and harden.

To create the caramel glaze, combine the remaining 1 cup of sugar with corn syrup and lemon juice in a small saucepan. Cook over medium heat without stirring, allowing the mixture to reduce and darken to an amber color.

Reduce the heat and quickly whisk in the heavy cream 1 tablespoon at a time, stirring constantly to avoid lumps. Strain the caramel sauce if necessary and transfer it to a bowl to cool.

Once cooled, spread a small amount of the caramel sauce between cookies to form delicious sandwiches.
