Caramel Apple Pudding Cake
Ingredients
  • 2 cups apple - peeled, cored, and chopped
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 cup chopped walnuts
  • 3/4 cup raisins
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1 cup water
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). Next, take a moment to grease and dust an 8 inch square baking pan with some non-stick spray.
2
In a spacious mixing bowl, combine your sliced apples and granulated sugar in a harmonious blend. Allow the mixture to rest for approximately 8 minutes, during which time the sugar will have fully incorporated and dissolved.
3
In a separate bowl, whisk together your egg and vanilla extract until well combined. Then, gently fold this mixture into the apple mixture.
4
In another bowl, whisk together your all-purpose flour, baking soda, and ground cinnamon until well combined. Gradually add this mixture to the apple mixture, stirring until everything is fully incorporated.
5
Fold in your chopped nuts and raisins to add texture and flavor to the cake batter.
6
Take the prepared baking pan and pour in the cake batter.
7
Bake the cake in your preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
8
While the cake is still warm, pour your prepared topping over it.
9
The Topping: In a medium-sized saucepan, combine 1/2 cup brown sugar, 1/2 cup white sugar, and 2 tablespoons all-purpose flour. Stir in the water until it's fully incorporated.
10
Cook this mixture over medium heat, stirring constantly, until it boils and thickens. Remove from heat and stir in 2 tablespoons of unsalted butter, vanilla extract, chopped walnuts, and raisins. Stir until the butter has melted, then pour over the warm cake.
