First, carefully cut the quarter grapefruit in half and separate the segments to remove the rinds. Reserve the rinds for another use, such as making a flavorful syrup or adding to a dessert.

Next, slice each grapefruit rind lengthwise into thin strips, about 1/4 inch wide. Place the sliced rinds in a saucepan and cover them with 2 inches of water.

Boil the grapefruit rinds in the saucepan for 3 minutes, then drain the water. Repeat this process three more times using fresh water to rinse the rinds.

After boiling the grapefruit rinds, combine them with 1 3/4 cups of sugar and 1 cup of fresh water in the saucepan. Allow the mixture to simmer slowly, increasing the heat as necessary, until all the water has been absorbed or evaporated.

Once the syrup has finished simmering, transfer 1 cup of sugar to a large bowl and toss in the cooked grapefruit rinds. Let them cool, then spread them out on wax paper or a wire rack to dry completely.

Finally, dust the dried grapefruit rinds with additional sugar if desired.
