Immerse cracked rye berries in a bowl of warm water until the majority of the liquid has been absorbed, approximately 30 minutes.

Combine 3/4 cup milk, brown sugar, egg, butter, bread flour, gluten, yeast, and salt in a mixing vessel or according to the manufacturer's instructions for a bread machine; incorporate the soaked rye berries into the mixture alongside the bread flour. Set the bread machine to the Dough cycle and initiate the process.

Upon completion of the cycle, remove the dough, apply pressure to release any air pockets, and permit it to relax for 10 minutes. Divide the dough into two equal portions, eliminate any air bubbles, and shape into round or long loaves. Place the loaves on a baking sheet, cover with a clean dish towel, and allow them to rise in a warm environment until they have doubled in size, roughly 35 minutes.

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

Gently brush the tops of loaves with 1 tablespoon milk.
