- 2 teaspoons baking powder
- 1 1/2 teaspoons cinnamon

- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup Heinz Tomato Ketchup
- 1/2 cup water
- 2 tablespoons red food colouring
- 3/4 cup butter, softened
- 1 1/2 cups packed dark brown sugar
- 2 eggs
- 6 ounces brick-style cream cheese, softened
- 3/4 cup butter, softened
- 1 teaspoon vanilla extract
- 4 cups icing sugar

Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).

Next, prepare the baking pans: Spray two 9-inch round cake pans with non-stick cooking spray and line the bottoms with parchment paper for easy removal.

Make the cake batter by combining flour, baking powder, cinnamon, baking soda, nutmeg, and ginger in a bowl. In another bowl, whisk together ketchup, water, and food coloring until well mixed.

Using an electric mixer, cream butter in a large bowl until it reaches a smooth consistency. Gradually add sugar and mix until the two are fully incorporated, then beat in eggs one at a time.

Add the flour mixture to the butter mixture in two batches, alternating with the ketchup mixture on low speed. Scrape down the sides of the bowl as needed to ensure everything is well combined. Increase the speed and beat for 1 minute.

Divide the batter evenly between the prepared pans.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of each cake comes out clean.

Allow the cakes to cool in the pans for 15 minutes, then use a table knife to loosen the edges. Carefully invert each cake layer onto a wire rack.

While the cakes are cooling, prepare the frosting: Beat cream cheese, butter, and vanilla in a mixing bowl with an electric mixer on medium speed until smooth. Gradually add powdered sugar and mix on low speed, scraping the bowl as needed.

Once the cakes are completely cool, place one layer on a serving plate. Cover with frosting and spread it evenly to the edges. Place the second cake layer on top, then frost the sides of the cake and finish by frosting the top.
