  • 1 (1 ounce) package taco seasoning mix
  • 12 (5 inch) corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 2 cups shredded iceberg lettuce
  • 1 large tomato, diced
  • 1 (8 ounce) jar salsa
  • 1 (8 ounce) container sour cream

Heat a large skillet over high heat, stirring constantly to break up the ground beef until it reaches a browned state. Remove excess fat from the skillet, then add the taco seasoning as directed on the package.

Prepare a pie iron by spraying it with cooking spray, and place a tortilla inside on one side. Add a portion of the ground beef, followed by some shredded Monterey Jack cheese and chopped onion on top. Place another tortilla on top to seal the taco, then close the pie iron.

Cook the taco over medium heat from a campfire, allowing it to crisp and brown the tortillas and reach a hot center. Serve with lettuce, tomato, salsa, and sour cream. Repeat the process using the remaining ingredients.
