Campfire Foil Pack Dinner
Ingredients
  • 1 pound skinless, boneless chicken breast meat - cubed
  • 2 onions, diced
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 yellow bell pepper, seeded and sliced into strips
  • 1 red bell pepper, seeded and sliced into strips
  • 4 cloves garlic, sliced
  • 4 small potatoes, cubed
  • 1/4 cup olive oil
  • 1 lemon, juiced
Instructions
1
Acquire all necessary ingredients and materials.
2
Create a campfire, allowing it to burn until a substantial layer of embers forms. Gather these embers and arrange them in a flat, even layer on one side of the fire.
3
Combine chicken, onion, mushrooms, peppers, garlic, and potatoes in a large container or resealable plastic bag. Drizzle with olive oil and lemon juice, then mix until the ingredients are evenly coated.
4
Divide the mixture into four large sections of aluminum foil, placing an equal amount on each. Cover each portion with another sheet of foil and seal the edges tightly to form a packet.
5
Cook over the preheated coals until the chicken reaches an internal temperature of 165 degrees F (74 degrees C), indicating it is fully cooked and the juices run clear, approximately 40 minutes.
