Caldo Verde Soup

  • 1 1/2 pounds Portuguese linguica sausage, cut into 1/2-inch think slices
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 6 cloves garlic, roughly chopped
  • 8 cups chicken broth
  • 4 medium white potatoes, cut into 1/2-inch cubes
  • 2 teaspoons freshly ground black pepper
  • 1 pound kale, stemmed and cut into strips
  • 1 cup cannellini beans, drained
  • salt to taste

Cook sausage slices in a large non-stick pan over high heat until they are nicely browned, taking about 3 to 5 minutes on each side. Remove the sausage from the pan and place it on a plate, leaving any remaining fat behind.

Next, add some olive oil to the same pan and heat it over a medium temperature; then gently stir in sliced onions. Continue cooking and stirring the onions until they start to develop a rich brown color, which should take around 8 to 10 minutes.

Following that, add minced garlic to the pan and cook for just one minute, allowing its aroma to fill the air. Now, return the cooked sausage back into the pan and add some chicken broth, diced potatoes, and a few grinds of pepper. Bring the mixture to a rolling boil.

Add some chopped kale and cannellini beans to the pot, then gradually reduce the heat to a slightly lower temperature. Let everything simmer together for about 30 minutes, or until the sausage is fully cooked through and the potatoes are tender.
