Ingredients
- 2 tablespoons olive oil
- 1 medium onion, minced
- 8 cloves garlic, minced
- 2 Spanish chorizo links, sliced
- 2 thick slices smoked ham, diced, or more to taste
- 3 medium potatoes, peeled and diced
- 2 medium turnips, peeled and diced
- 8 cups chicken stock
- 1 (15 ounce) can white cannellini beans
- 3 cups chopped turnip greens
Instructions
1
Heat a generous amount of oil in a large cooking vessel over a moderate temperature. Introduce the onion into the pot and cook until it becomes clear, taking anywhere from 5 to 10 minutes. Add the garlic; stir constantly until it emits a pleasant aroma, approximately 1 to 2 minutes.
2
Combine the chorizo and ham in the pot; stir frequently until they develop a light brown hue, roughly 3 to 4 minutes. Add the potatoes and turnips; pour in the stock and bring the mixture to a rolling boil. Lower the heat to a moderate-low setting, cover the pot, and let it simmer until the potatoes and turnips are tender, approximately 20 minutes.
3
Boost the heat to a moderate level and incorporate the beans and greens into the pot; cook until the greens become tender, at least 3 minutes.
