Ingredients
- 3 tablespoons olive oil, divided
- 1 tablespoon fresh lemon juice
- salt and ground black pepper to taste
- 1 1/4 pounds fresh swordfish, cut into chunks
- 1 small onion, chopped
- 1 teaspoon all-purpose flour
- 1 1/2 cups dry white wine
- 1 (19 ounce) can fava beans, drained
- 1 bunch fresh parsley, chopped
Instructions
1
Combine 2 tablespoons of olive oil, lemon juice, salt, and pepper in a medium-sized bowl. Combine the fish with the marinade ingredients until it's evenly coated. Allow the fish to sit in the marinade for approximately 15 minutes. Remove the fish from the marinade and gently pat it dry with a paper towel.
2
Heat the remaining olive oil in a large skillet over medium-high heat. Cook the onion until it reaches a golden brown color, taking around 8 minutes to achieve this. Add the fish to the skillet and cook for about 1 minute on each side, or until it's nicely browned; set the fish aside.
3
Add a small amount of flour to the skillet and cook, stirring constantly, until it's lightly browned. Gradually stir in some white wine; continue to cook and stir until the mixture is well combined. Return the fish to the skillet, along with the fava beans. Sprinkle some fresh parsley on top and cover the pan. Simmer the mixture for 2 to 3 minutes, or until the fish flakes easily with a fork.
