- 2 cups peeled, shredded potatoes
- 1/4 onion, shredded
- 1/3 cup chopped green onion
- 2 eggs, beaten
- 2 tablespoons all-purpose flour, or as needed
- 1 1/2 teaspoons Cajun seasoning, or to taste
- 1 cup canola oil, or as needed

Gather the potatoes and gently squeeze them in a clean cloth to extract as much moisture as possible. Combine the potatoes, finely chopped onion, scallions, eggs, all-purpose flour, and a blend of herbs known as Cajun seasoning in a bowl until everything is well incorporated.

Heat the oil in a substantial, heat-diffusing skillet over medium heat until it sparkles (oil should be about 1/3 inch deep). Drop approximately 2 tablespoons of the potato mixture per patty into the hot oil, and press them down to make the patties 1/4 to 1/2-inch thick. Cook the patties in the hot oil until they turn golden and crispy on the bottom, around 5 minutes, then flip them over to cook on the other side. Remove the latkes from the oil with a paper towel and serve them immediately.
