- 1 teaspoon Cajun seasoning, or to taste
- 2 tablespoons chopped fresh flat-leaf parsley
- salt and freshly ground black pepper to taste

Preheat the oven to a high temperature of 350 degrees Fahrenheit, or 175 degrees Celsius.

Poke holes in the potatoes using a fork and position them on a baking sheet.

Allow the potatoes to cook in the preheated oven until they become soft and palatable, approximately 1 hour.

Wait for the potatoes to cool down completely, taking around 15 to 20 minutes.

Cut the cooked potatoes into small pieces, leaving their skin intact.

Heat a large cooking vessel made of cast iron or nonstick material over medium heat.

Add a generous amount of olive oil to the pan when it reaches the desired temperature.

Once the pan is hot, add sliced onions, bell peppers, and minced garlic.

Allow these vegetables to soften and become tender, taking around 3 to 5 minutes.
