Ingredients
- 2 (8 ounce) fillets cod, cut in half
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons butter
- 1 lemon, juiced
- 2 tablespoons chopped green onion (white part only)
Instructions
1
Acquire all necessary ingredients beforehand.
2
Arrange approximately 15 charcoal briquettes in a triangular formation on the grill, creating a pyramid structure. If you wish to enhance the fire, lightly drizzle the coals with lighter fluid and permit them to absorb the liquid for 1 minute prior to igniting the coals using a match. Allow the fire to spread evenly across all coals, approximately 10 minutes, before spreading the briquettes out into a flat layer on the grill; let the coals continue to burn until they are covered with a thin, white ash layer. Lightly coat the grill grates with oil.
3
Prepare cod fillets by sprinkling both sides of them with a blend of Cajun seasoning, lemon pepper, salt, and black pepper. Place the fillets on a plate to await further preparation.
4
Combine butter in a small saucepan over medium heat, then stir in lemon juice and green onion. Allow the mixture to cook until the onion is softened, approximately 3 minutes.
5
Grill the cod fillets on the preheated grill until they are browned and flaky, about 3 minutes per side; frequently baste the fillets with the butter mixture while grilling.
6
Once the fillets are done, remove them from the heat and allow them to rest for about 5 minutes before serving.
7
Present the cooked cod fillets and indulge in your meal
